We didn’t use canned pumpkin nor did we cook and puree a pumpkin ourselves.  We took a raw sugar pumpkin, cut it into quarters, peeled it, and grated it.  This method is very similar to zucchini bread, but only in method, not flavor. This pumpkin bread definitely has a more mild flavor than regular pumpkin bread.  Those who don’t normally like pumpkin bread might give this one a try.
