Pretzel Bites: Two Ways

These would also make a great after school snack or a fabulous addition to a home packed school lunch.2 cups milk
1 1/2 TSAF instant yeast*
6 T brown sugar*
4 T butter, melted
4 1/2 cups flour*
2 tsp salt*
1/3 cup baking soda*
3 cups water Pretzel salt*
1/2 cup granulated sugar*
2 tsp cinnamon* Warm up the milk in the microwave for about 2 minutes. Stir in the yeast, brown sugar, and melted butter. Mix. Add the flour 1 cup at a time and then add the salt. Put it in a greased bowl and cover with cling wrap. Let rise for 1 hour in a warm place until doubled in size. Preheat the oven to 450º. Roll them all out into a log shape as thin as you can. Combine the water and baking soda in a small saucepan and bring to a simmer. Cut the dough into 1 1/2″ pieces, then put in the boiling water for about 1 minute. Remove from the water and place on a paper towel to get rid of the excess water. Place on a greasedbaking sheetand sprinkle with pretzel salt. (Omit salt for cinnamon sugar variation.) For cinnamon sugar variation, allow pretzel bites to cool. Combine granulated sugar and cinnamon in a large zip top bag. Dip pretzel bites into melted butter and put in cinnamon sugar.
